Chicken Fried Rice, Egg Rolls, NOT so Fried Ice Cream

This is one of my go to meals, and it is a Natalie Original.   It's wonderful, it's easy, I can sneak veggies and proteins along with whole grains into it, AND it's a one plate meal which makes clean-up a snap.  Here is your grocery list.

Prep time: 5 min.  Cook time: 25 min.
For four large servings:
3 skinless chicken breast (Pounded even in order for them to cook evenly)
1 Tablespoon of Sesame Oil (Found in the Asian section of your local grocery store. Any oil can be used as       a substitute...canola, olive, and coconut are all oils that I have used in this dish)
1 Tablespoon of Canola oil (To cook your chicken in)
2 Boil- a -Bag's of Brown Rice (Cooked as per directions)
1/4 cup of low sodium Soy Sauce
1 small yellow onion (Finely diced)
2 cups of frozen mixed veggies cooked.
3 eggs whisked.
1 teaspoon of Garlic Powder
Salt and Pepper to taste
1 box of Frozen Egg Rolls.

Pre-heat your oven according to the directions on the Egg Rolls and put your Egg rolls in the oven for the amount of time specified on the box (usually 18 to 20 min.) They will be done at the same time your fried rice is complete.

In a large skillet, brown your chicken in your canola oil about 7 min. on each side. Set aside to cool then dice.

Get your sesame oil other oil heated on med-high to high in the same skillet.  Pour your rice in. Let this "fry" for a couple of minutes.   Stir and add soy sauce, onion, veggies, and garlic powder. Turn down the heat to medium. Move the rice to one side of the skillet, and add your eggs.  Stir the eggs and gradually add them to your rice as they are cooked.   Stir everything together and add your chicken and Salt/Pepper to taste.  Let it cook together for about 5 min. stirring frequently.  Plate with an egg roll and enjoy!


Dessert:

 " NOT So Fried Ice Cream"
*Note:  The topping should be prepared ahead of time to make this dessert even easier to prepare.

Vanilla Ice Cream
Topping:
1 cup Crushed Corn Flakes
2 teaspoons Cinnamon
1/4 cup Sugar
Honey

Mix together your Corn Flakes, Cinnamon and Sugar.

Put your servings of Vanilla Ice Cream in individual bowls

Sprinkle your Corn Flake mixture on top of the Ice Cream, Gererously!

Drizzle with Honey.  

Enjoy!
